Irish Soda Bread

Prep time: 10 minutes

Cook time: 45 to 50 minutes

1 1/2 cups Chobani Plain Oat Beverage or milk

2 tablespoons lemon juice

1 egg

4 3/4 cups flour

1/2 cup sugar

l tablespoon baking powder 

1 1/4 teaspoons each: baking soda and salt

1/2 cup butter, melted

1 cup raisins

1 tablespoon caraway seeds (optional)

Irish butter or cheese

Preheat oven to 350°F and line a large baking sheet with parchment paper. Place milk and lemon juice or vinegar in a large liquid measuring cup and let stand for 5 minutes; whisk in egg. Stir together flour, sugar, baking powder, baking soda and salt in a large bowl. Stir in milk and butter until well mixed. Lightly knead in raisins or caraway seeds. Knead several times on a lightly floured board then shape into 2 equal balls. Place on prepared baking sheet and flatten slightly. Cut a small “x” in the top of each. Bake for 45 to 50 minutes or until a sharp knife inserted in the center comes out clean. Serve with Irish butter or cheese. Makes 2 loaves. 

Leftover tip:

Use leftover bread with raisins to make French toast. Use leftover bread with caraway seeds to make grilled corned beef and cheese sandwiches.
