Canning Jar Baked Egg Bar

Cooking the eggs with cottage cheese makes them silky smooth. Set out cooked eggs with bowls of toppings to let guests top their favorite things.  

Prep time: 10 minutes

Cook time: 40 minutes


1 cup cottage cheese

1 cup shredded sharp or extra sharp Cheddar cheese, divided

1/4 cup shredded Swiss cheese

1/4 cup snipped green onion tops

1 teaspoon dried basil

1/2 teaspoon smoked sea salt

6 eggs 

Freshly ground pepper to taste

Toppings: Cooked crumbled bacon, diced ham, chopped roasted red peppers, sliced green onion tops, sliced olives, avocado and pico de gallo or salsa 

Preheat oven to 350°F and butter six (1 cup) canning jars. Puree cottage cheese, 3/4 cup Cheddar cheese, Swiss cheese, salt and eggs in a blender. Stir in remaining Cheddar, basil and chives. Pour into jars and loosely seal lids. Place in an 8 or 9-inch baking dish and add water to cover the bottom third of the jars. Bake for 40 minutes. Remove from water and remove lids to let cool. Cover with lids and refrigerate until ready to serve. May be prepared 2 days in advance and reheated in the microwave. Serve with bowls of toppings for people to top their eggs as they wish. Makes 6 servings. Recipe may be doubled.
