Fruit and Cheese Crepes

Prep time: 10 minutes

Cook time: about 2 minutes

4 large prepared crepes

1/2 cup whipped cream cheese or ricotta cheese, divided

1/4 cup Bonne Maman Intense Fruit Spread (any variety)

3/4 cup chopped fresh fruit, plus additional for garnish

2 tablespoons butter

Place crepes on a board and unfold halfway to make a semi-circle.  Spread cream cheese or ricotta cheese in the center of each.  Spread 1 tablespoon fruit spread over cheese on each crepe and sprinkle with equal amounts of fruit. Fold in both sides to make a triangle. Melt butter in a very large skillet over medium heat. Add crepes and cook for about 30 seconds on each side or until filling is warm, being very gentle while turning as crepes are very delicate. Keep warm in the oven until ready to serve. Top with additional fruit, if desired. Makes 4 servings.
