Overnight Fruity Almond French Toast

Prep time: 20 minutes

Stand time: Several hours to overnight

Cook time: 50 to 55 minutes

5 (1-inch thick) slices brioche bread

1/4 cup butter, melted (plus extra for baking dish)

1 1/2 cups almondmilk or milk

1/3 cup sugar

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

3 eggs

1/3 cup Bonne Maman Fruit Spread (any variety)

1/2 cup fresh blueberries

1/2 cup sliced almonds

Powdered sugar (optional)


Preheat oven to 350°F. Cut or tear bread  into chunks and place on a baking sheet; bake for 5 minutes or  until it’s lightly toasted on the outside, but still soft on the inside. Lightly butter an 8 or 9-inch square baking dish. Whisk together milk, sugar, melted butter, extracts and eggs in a large bowl. Pour over bread and press down lightly with a wooden spoon to coat bread with mixture. Cover and refrigerate for several hours or overnight. Remove from the refrigerator and place small spoonfulls of fruit spread evenly throughout, nestling it  gently into the bread the back of a small spoon. Tuck in fruit and sprinkle with almonds. Preheat oven to 350°F. Bake for 45 minutes or until puffed and golden brown. Serve warm dusted with powdered sugar, if desired.
