Sheet Pan Sweet Potato Hash with Eggs

We’ve kept this recipe vegetarian but added a bit of smokey flavor with smoked paprika and smoked sea salt. Feel free to add cooked crisp bacon if you prefer a meatier dish.

 

Prep time: 20 minutes

Cook time: 45 minutes

 

3 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon smoked sea salt

3/4 teaspoon dried thyme

1/2 teaspoon garlic powder

1 1/2 lbs. pale skinned sweet potatoes, peeled and cut into 1/2-inch cubes

1/2 lb. orange skinned yams, peeled and cut into 1/2-inch cubes

1 cup chopped onion

1/2 cup diced red bell pepper

Freshly ground pepper to taste

4 Happy Egg Company Eggs, cooked to your liking

Chopped fresh thyme (optional)

 

Preheat oven to 425°F and line a large baking sheet with parchment paper. Stir together oil, smoked paprika, salt, thyme and garlic powder in a large bowl. Add  potatoes and onion and cook for 30 minutes or until very soft, stirring halfway through cooking. Stir in bell pepper and cook for 15 to 20 minutes more or until all vegetables are nicely browned. Season with pepper and top each serving with a fried egg and chopped fresh thyme, if desired. Makes 4 servings. Recipe may be doubled cooking on 2 sheet pans.
