Slow Cooker Maple Pear Breakfast Quinoa

Prep time: 15 minutes  

Cook time: about 1 1/2 to 3 hours  

2 1/2 cups Blue Diamond Vanilla Almond Breeze

1 cup quinoa

1/4 cup pure maple syrup

3/4 tsp. cinnamon

1 (15-oz.) can juice packed pears, drained and diced

1 cup vanilla Greek yogurt

Brown sugar and toasted sliced almonds

Place almond milk, quinoa, syrup and cinnamon in a large slow cooker. Cover and cook on high for 1 1/2 hours. Stir in pears and yogurt and cook for 5 minutes more until heated through and thickened. Spoon into bowls and sprinkle with brown sugar and almonds. Makes 4 to 6 servings.
