Stuffed French Toast

Prep time: 10 minutes

Cook time: about 6 minutes

 

8 slices French or brioche bread

Cream cheese

Preserves (any flavor)

1/2 cup cream, 1/2 & 1/2 or milk

1 tablespoon sugar or almond or amaretto flavored coffee syrup

3 Happy Egg Company Eggs

Butter

Powdered sugar

Vanilla Greek yogurt, almond or amaretto favored coffee syrup and toasted sliced almonds

     (optional toppings)

 

Spread a thin layer of cream cheese on each bread slice then place a small dollop of cream cheese in the center of half the bread slices. Top with a dollop of preserves and press bread slice together, pressing lightly to seal in filling. Whisk together cream, milk or 1/2 & 1/2, sugar or syrup and eggs with a fork in a shallow dish. Dip each filled bread slice in the mixture, turning to coat both sides. Melt a generous amount of butter in a large skillet over medium heat. Place bread in skillet and cook for about 3 minutes on each side or until golden brown. Sprinkle with powdered sugar, or serve with yogurt, almond syrup and almonds. Makes 4 servings.
