Almond Flour Chocolate Chip Cookies

Prep time: 20 minutes 

Chill time: at least 1 hour

Cook time: 18 to 20 minutes  

 

1/2 cup butter, softened

1/4 cup packed brown sugar

1/4 cup sugar

1 teaspoon vanilla extract

1 egg plus 1 egg white

2 1/2 cups (11-oz.) Blue Diamond Almonds Finely Sifted Almond Flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

 

Preheat oven to 350°F and line 2 baking sheets with parchment paper. Beat together butter, sugars and vanilla extract in a large bowl, then beat in eggs. Whisk together almond flour, baking soda and salt, then stir into butter mixture. Stir in chocolate chips. Cover and chill for at least 1 hour. Scoop 3 tablespoons of dough (2 oz by weight)  and roll into balls. Place on prepared baking sheets 2 inches apart and flatten slightly. Bake for 18 to 20 minutes or until lightly browned on top. Makes about 13 large cookies. Store in a container with a loose fitting lid.
