Chocolate Peppermint Cups
Prep time: 5 minutes
Line muffin cups with paper liners. Place a mint sandwich or chocolate covered cookie in the bottom of each. Spoon slightly softened peppermint ice cream over cookies, pressing lightly with the back of a spoon to fill cups and smooth the surface. Freeze until firm, then remove paper wrappers. Drizzle with chocolate sauce, if desired.
