Fudgy Yogurt Brownie Bites

Cook time:  40 minutes

 

1/4 cup Chobani Vanilla Zero Sugar Yogurt

1 teaspoon vanilla extract

1 Happy Egg Company Egg, beaten

3/4 cup lightly packed fine almond flour

3 oz. dark chocolate chips, melted

Sliced almonds (optional)

 

Preheat oven to 350°F and grease 10 to 12 mini muffin cups*. Stir together yogurt, egg and vanilla in a medium bowl, then stir in almond flour. Place chocolate chips in a small glass bowl and microwave on 50% power for 30 seconds. Stir and microwave in 30 second increments until chocolate Is almost melted. Stir until fully melted. Bake for 15 minutes or until brownies feel firm to the touch and a toothpick inserted into the center comes out clean. Let cool completely before removing from tins and store in a container with a loose fitting lid.

 

*Muffin cups will vary in size. Deeper cups will yield 10 brownies. Shallow cups will yield 12 brownies.
