Leftover Turkey Stuffing Bake

A great use of leftover turkey, stuffing, gravy and vegetables.  This easy recipe will help you finish up those holiday leftovers! Swap out the stuffing with mashed potatoes or Cauliflower Faux-Tatos. 

Prep time: 15 minutes

Cook time: 35 minutes


2 tablespoons butter

1/2  cup chopped onion

1/2 cup chopped carrot

1 stalk celery, diced

1 1/2  cups leftover turkey gravy (or 2 12-oz. jars) 

2 cups diced or shredded leftover turkey

1 teaspoon dried Italian herb seasoning

2 cups leftover turkey stuffing, mashed potatoes or Cauliflower Faux-Tatos

Preheat oven to 400 degrees. Spray a small shallow baking dish with nonstick cooking spray or lightly butter. Melt butter in a medium skillet over medium heat. Add onion and carrot and cook for about 10 minutes or until soft. Add celery and cook for a few minutes more. Stir in turkey and gravy and cook until hot and bubbly. Stir in herbs, then transfer to prepared baking dish. Crumble stuffing evenly over top and bake for 20 minutes. Makes 6 servings.
