Mini Walnut Apple Pies

With only 1 tablespoon of sugar in the entire recipe, this a great snack or healthy dessert!

Prep time: 20 minutes
Cook time: 25 minutes

1 tablespoon healthy buttery spread or butter
1 tablespoon brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/3 cup apple juice
1 large green apple, peeled, cored and chopped
1/3 cup chopped California walnuts
1 (1.9-oz.) package mini fillo shells

Preheat oven to 350°F. Melt butter in a medium saucepan with brown sugar and spices. Add apple juice and chopped apple and cook over medium-low heat for 15 minutes or until apple is very soft and juice has cooked off, stirring frequently. Stir in walnuts and spoon mixture into fillo shells. Place on a small baking sheet and bake for 10 minutes. Makes 15 mini pies.
