Cheesy Creamed Spinach and Butternut Squash

Prep time: 30 minutes
Cook time: 35 minutes

1/3 cup Crystal Butter
2 cups chopped onion
2 cups 1/2-inch cubes butternut squash
1 1/2 cups vegetable broth
1 cup Crystal Heavy Cream or Half & Half
2 (6.5-oz.) containers Alouette Garlic & Herbs Soft Spreadable Cheese
3 (12-oz.) packages frozen, chopped spinach, thawed and squeezed dry
Sea salt and freshly ground pepper to taste

Melt butter in a large skillet over medium-high heat. Add onion and butternut squash and cook for 5 minutes, stirring frequently, until nicely browned. Reduce heat and cook for 20 minutes more or until squash is soft, stirring frequently. Stir in broth, cream and cheese and cook until hot and bubbly. Stir in spinach and cook just until heated through, adding additional broth if mixture is too thick*. Season with salt and pepper. Makes 12 servings.

*Moisture will vary depending on the moisture in the spinach.
