Jalapeno Artichoke Cheese Spread

1 cup Crystal Sour Cream
1/2 cup chopped canned artichoke hearts
3 tablespoons minced pickled jalapeno peppers plus 1 tablespoon
pickling liquid from jar
3 tablespoons minced red onion
3/4 cup shredded pepper-Jack cheese
1/4 cup shredded Parmesan cheese
2 teaspoons cornstarch
Stir together sour cream, artichoke hearts, jalapeno peppers, pickling liquid and red onion in a small saucepan. Simmer over low heat for 5 minutes. Toss cheeses with cornstarch in a medium bowl. Add cheese a little at a time to saucepan, stirring constantly. Cook only until cheese is melted. Makes about 1 1/2 cups. Serve warm or cold with crackers, tortilla chips or cut vegetables.
