California Walnut Pesto

Prep time: 10 minutes

1 cup California Walnuts, toasted
1/2 cup packed fresh Italian parsley, chopped
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic
1 large bunch fresh basil (about 2 1/2 oz.)
Juice and zest of 1 lemon
1/4 cup extra-virgin olive oil
Place walnuts, parsley, Parmesan, salt, pepper, garlic, basil and lemon juice and zest in a food processor. Pulse for 30 seconds or until finely chopped. Drizzle in olive oil with the motor running and process for 15 to 20 seconds or until combined.

Serve over pasta, vegetables or use in place of mayo on a sandwich.
