Mango Peach Crepes

Prep time: 5 minutes
Cook time: about 1 1/2 minutes per crepe

1 cup prepared baking mix
2/3 cup milk
1 egg, beaten
Melted butter
Vanilla Greek yogurt
Fresh mango and peach slices or cubes
Bon Maman Mango Peach Preserves

Stir together baking mix, milk and egg in a medium bowl, adding additional milk if needed to form a thin batter. Set a skillet over medium heat and brush with melted butter. Pour about 1/4 cup of batter into the skillet, tipping and swirling the skillet to make a very thin pancake. Cook until golden brown on the bottom, then turn and cook for 30 seconds more. Remove and keep warm. To assemble crepes, place a large spoonful of yogurt in the center of each crepe and top with fruit. Roll up and place on plates. Top with jam and additional fruit. Makes 4 servings.
