Grilled Mexican Egg Sandwiches

Prep time: 10 minutes
Cook time: about 10 minutes

1 Stonefire Pizza Crust, halved
6 eggs, beaten
2/3 cup shredded Sartore Montamore Cheddar Cheese
Butter
Salt and pepper to taste
1/3 cup Mrs. Renfro’s Craft Beer Salsa, plus additional for dipping
Place pizza crust on a grate above a campfire and cook until lightly toasted on one side. Cook eggs and cheese in a buttered medium skillet, stirring occasionally, until cooked through. Season with salt and pepper. Place eggs on half the pizza crust and top with a few spoonfuls of salsa. Top with the other pizza crust half and press down lightly. Cut into 4 pieces. Serve with additional salsa, if desired.
