Fruited Couscous and Spinach Salad

Prep time: 15 minutes
Cook/stand time: about 8 minutes
Chill time: at least 1 hour

1 tablespoon olive oil
3/4 cup plain couscous
1 cup vegetable or chicken broth
1/3 cup diced Sunsweet Dried Apricots
1/3 cup Sunsweet Amazin Diced Prunes or diced Sunsweet Prunes
1/4 cup minced red onion
3 cups baby spinach, coarsely chopped
Sea salt and pepper to taste
Dressing:
3 tablespoons olive oil
3 tablespoons wine vinegar
2 tablespoons apricot preserves
Heat olive oil in a large saucepan over medium-high heat. Add couscous and cook for 3 to 4 minutes or until toasty. Add broth and cook over high heat just until broth begins to boil. Cover and remove from heat and let stand for 5 minutes. Fluff with a fork and let cool. Stir in dressing then chill for at least 1 hour. Stir in remaining ingredients. Makes 4 servings.
