Corn and Black Bean Salad

This salad does double duty! It’s also great served as a dip with Sun Harvest Tortilla Chips for dipping.

Prep time: 15 minutes
Chill time: 1 hour

1 (15.25-oz.) can Sun Harvest Organic Corn, drained
1 (15-oz.) can Sun Harvest Organic Black Beans, rinsed and drained
1/2 cup 1/4-inch dice red bell pepper
1/3 cup sliced green onions
1/4 cup First Street Salsa Fresca
3 tablespoons First Street Olive Oil
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
2 teaspoons First Street Chili Powder
3/4 teaspoon First Street Ground Cumin
1 teaspoon First Street Garlic Salt
Stir together all ingredients in a medium bowl. Chill for 1 hour for flavors to blend. Makes 6 servings.
