Twice Baked Potato Bar

Start with a basic twice baked potato and set out with toppings. Make it a main dish or a side dish.

Prep time: 15 minutes
Cook time: 30 minutes

4 medium russet or Yukon gold potatoes
3 tablespoons butter
1/4 cup sour cream
1/2 teaspoon garlic salt, or to taste
1/4 teaspoon pepper

Toppings:
Diced cooked chicken tossed in buffalo wing sauce
Litehouse Gorgonzola, Blue or Feta Cheese Crumbles
Diced tomatoes
Sliced olives
Sliced green or reds onion
Cooked, crumbled bacon
Rinse potatoes and pierce with a fork. Place on a plate and microwave on high for about 15 minutes or until potatoes are soft when gently squeezed. Let cool slightly, then scoop out centers with a small spoon, leaving a small rim of potato inside the skin. Place in a medium bowl and mash with a potato masher or a fork. Add butter, then add sour cream and seasonings. Mix well and spoon back into potato skins. Preheat oven to 425°F. Place potatoes on a baking sheet and cook for 10 to 15 minutes or until lightly browned. Set out toppings with potatoes. Makes 4 to 6 servings.
