Chipotle Cherry Chicken Tostadas

Perfect tailgating or for a quick weeknight meal.

Prep time: 15 minutes
Cook time: 10 to 12 minutes

2 tablespoons olive oil
2 pounds boneless, skinless chicken breasts, cut into 1/2-inch cubes
1 cup prepared salsa
1/2 cup Bonne Maman Cherry Preserves
3 tablespoons lime juice
2 to 3 tablespoons minced chipotle pepper in adobo sauce
Sea salt to taste
Small tortilla boats or crisped small flour or corn tortillas
Sliced romaine lettuce, diced avocado, plain Greek yogurt, cilantro leaves, lime wedges (toppings)
Heat oil in a large skillet over medium heat. Add chicken and cook for 5 to 7 minutes or until lightly browned and cooked through, stirring occasionally. Add salsa, preserves, lime juice and chipotle peppers. Cook for 5 minutes or until sauce has reduced and nicely coats the chicken. Season with salt. Spoon into tortilla boats or onto tortillas and top with yogurt and any other additional toppings. Makes 12 appetizer servings.
