One Pot Chicken Thighs with Butternut & Sweet Potato Stuffing


4 chicken thighs
½ teaspoon garlic powder
Salt and pepper to taste
3 cups Garden Highway Butternut & Sweet Potato Chef Veggie Starter
1 cup panko bread crumbs
Parsley to garnish
Preheat oven to 400°F. Season chicken thighs with garlic powder, salt and pepper. Mix Butternut & Sweet Potato Chef Veggie Starter with bread crumbs and season with salt and pepper. In a roasting pan place starter mixture on the bottom of the pan. Place chicken thighs on top of the starter mixture. Cover and bake for 45-60 minutes, or until the internal chicken temperature is 165°F. Uncover and broil for 5-10 minutes to brown the top of the chicken thighs, watching carefully to avoid burning. Garnish with parsley. Makes 4 servings.
