Classic Meatloaf with Onions and Celery
2 cups Garden Highway Onion & Celery Chef Veggie Starter
1 tablespoon olive or vegetable oil
2 lbs. 90% lean ground beef
2 cups dry bread crumbs
1 cup milk
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1½ teaspoons salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
2 eggs, beaten
½ cup ketchup
2 tablespoons packed light brown sugar
Preheat oven to 350°F. Sauté Onion & Celery Chef Veggie Starter in oil in a large skillet set over high heat for 3 to 5 minutes. In a large bowl combine, sautéed Onion & Celery Chef Veggie Starter, ground beef, bread crumbs, ketchup, Worcestershire sauce, salt, garlic powder, pepper and eggs. Mix ingredients together until well combined. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. In a small bowl, stir together 1 ketchup, the brown sugar and vinegar. Stir well then spread evenly over the top of the meatloaf. Bake for 1 to 1 ¼ hours, or until the internal temperature is 165°F. Makes 6 to 8 servings.
