Creole Potato and Sausage Skillet
Prep time: 15 minutes
Cook time: about 25 minutes
3 medium russet potatoes
2 tablespoons olive oil
1 large onion, chopped
2 andouille sausages (preferably sliced), sliced 1/4-inch thick
1 cup 1/2-inch cubes bell pepper
Tony Cachere’s Creole Seasoning and salt to taste
4 cups Earthbound Farm Baby Kale
ce potatoes and place on a microwave-safe plate. Microwave on HIGH for 5 minutes. Let cool slightly, then cut into 3/4-inch cubes. Heat oil over medium-high heat in a very large nonstick skillet. Add potatoes and onion and cook for 10 minutes or until potatoes are golden brown, stirring frequently. Add sausage and bell pepper and season lightly with Creole seasoning. Cook for 5 minutes more, stirring frequently. Add additional Creole seasoning and salt to taste. Stir in kale and cook until it’s just lightly wilted. Makes 4 servings.
