Totchos with Nacho Cheese Sauce

Prep time: 30 minutes
Cook time: 30 minutes

1 (2-pound) bag tater tots
Nacho Cheese Sauce
2 tablespoons butter
2 tablespoons minced onion
2 tablespoons flour
3/4 cup milk
1/2 cup chicken broth or stock
1/4 cup Frontera Red Enchilada Sauce
Tajin Classico Seasoning to taste
1 cup shredded sharp Cheddar cheese
1/4 cup shredded pepper-Jack cheese
Toppings:
Sliced ripe olives, fresh pico de gallo, chopped pickled jalapeno peppers, sliced green onions, sour cream or plain Greek yogurt and guacamole (optional toppings)

Place tater tots on a baking sheet and cook for 25 to 30 minutes or until very crisp and browned. While tater tots are cooking, melt butter in a medium saucepan over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Stir in flour and cook for 1 minute more. Slowly stir in milk until a smooth sauce forms, then stir in enchilada sauce and seasoning. Add cheese a little at a time, stirring constantly. Cook over low heat for 5 minutes more. Transfer tater tots to a decorative dish and drizzle with desired amount of cheese sauce. Top with any additional desired toppings. Makes 8 servings.
