Brie and Artichoke Heart Stuffed Chicken

Make 1 or 10 servings. Don’t worry too much about the filling amounts. It will be tasty any way you make it!

Prep time: 20 minutes

Boneless, skinless chicken breasts
Sliced Brie cheese
Roasted red pepper strips
Coarsely chopped canned or marinated artichoke hearts
Garlic salt, pepper and dried Italian herb seasoning
Kitchen twine
Preheat oven to 350°F. Place chicken between layers of plastic wrap and pound until fairly thin. Place cheese, red pepper strips and artichoke hearts on one side and sprinkle lightly with seasonings. Roll up tightly, folding in the sides to enclose the filling. Tie in several places with kitchen twine. Place on a baking sheet and sprinkle again with seasonings. Bake for 45 minutes or until cooked through.
