Shortcut Butternut Tomato Soup

Prep time: 10 minutes
Cook time: 20 minutes

1 tablespoon olive oil or butter
2/3 cup chopped onion
1/3 cup finely chopped celery
1 (25.5-oz.) jar Dave's Gourmet Butternut Squash Pasta Sauce
1 (14.5-oz.) can vegetable or chicken broth
2 teaspoons herbes de Provence*
Sea salt and pepper to taste

Heat olive oil or melt butter in a medium saucepan over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Add celery and cook for 5 minutes more; add pasta sauce, broth and herbs. Reduce heat and simmer, covered for 20 minutes. Season to taste with salt and pepper. Puree with a stick blender if you prefer a smoother soup. Ladle into 4 bowls and shake blue cheese crumbles over each serving. Makes 4 small or 2 large servings.

*May substitute 1 teaspoon dried thyme, 1/2 teaspoon dried sage and 1/2 teaspoon crushed rosemary.
