Lemony Greek Pasta Salad
1/2 of a package Al Dente Egg or Spinach Fettucine
1/4 cup extra virgin olive oil
3 tablespoons lemon juice
1 teaspoon sugar
1/2 teaspoon sea salt
1/3 cup quartered Kalamata olives
1/3 cup roasted red pepper strips
1/4 cup slivered red onion
1 to 1 1/2 teaspoons Greek seasoning blend
Sea salt and freshly ground pepper to taste

Cook pasta according to package directions. Drain in a colander and rinse with cold water to cool quickly. Whisk together oil, lemon juice, sugar and salt in a large bowl. Add pasta and toss well to coat. Add olives, peppers, onion and seasoning and toss again. Season with salt and pepper and sprinkle liberally with Feta crumbles. Serve immediately or cover and chill until ready to serve. Makes 4 servings.
