Pumpkin and White Bean Chicken Chili

Cook time: 40 minutes
1 lb. ground chicken (turkey may be substituted)
1 1/2 cups chopped onion
1 1/2 cups chicken broth
3/4 cup canned pumpkin
1/2 cup sliced olives
3 tablespoons masa (corn flour)
2 tablespoons lime juice
1 tablespoon Mexican seasoning blend
1 (15-oz.) can white beans, drained
1 (8-oz.) packet Red Fork Chicken Verde Chile Sauce
1 (4-oz.) can diced green chiles
Garlic salt to taste
Shredded Jack cheese, sour cream, crumbled tortilla chips, sliced green onion
tops (optional toppings)
Cook chicken in a large saucepan over medium heat, breaking it up with the back of a spoon. Add onion and cook for 5 minutes; stir in remaining ingredients.
Reduce heat and simmer, covered, for 30 minutes. Ladle into bowls and serve with any desired toppings. Makes 6 servings.
