Cranberry Mango Sauce
Prep time: 15 minutes
Cook time: 40 minutes
1 heaping cup diced fresh mango
1 cup mango or tamarind nectar
1 cup sugar
2 tablespoons lime juice
2 to 3 teaspoons Gourmet Garden Lemongrass Stir-in Paste (optional)
2 teaspoons grated lime zest
1 (12-oz.) pkg. fresh cranberries
Stir together all ingredients in a medium saucepan. Bring to a boil; reduce heat and simmer, uncovered, for 40 minutes or until cranberries are soft and mixture is slightly thickened, stirring occasionally (it will continue to thicken as it cools.) Makes about 2 cups.
