Cranberry Balsamic Vinaigrette

Prep time: 5 minutes

1 cup olive oil
1/3 cup cranberry sauce
1/4 cup balsamic vinegar (preferably Monari Federzoni)
1 tablespoon whole grain mustard
1/2 teaspoon sea salt
Freshly ground pepper
Puree oil, cranberry sauce, vinegar, mustard and salt in a small blender until smooth Season to taste with freshly ground pepper. Makes about 1 2/3 cups.

Great over baby kale with sliced apples, red onions, walnuts and Litehouse Blue Cheese Sprinkles.
