Nutty Cinnamon Fruit Spread
Kid or grown up friendly!
Prep time: 10 minutes
1/2 cup dried Mediterranean apricots
1 cup California walnuts
2 tablespoons honey
2 tablespoons undiluted apple juice concentrate
1/2 teaspoon cinnamon
Place apricots in a food processor and pulse on and off to chop. Add remaining ingredients and pulse again until finely chopped. May be stored tightly covered in the refrigerator for up to 1 week. Serve on whole grain bagels, apple slices, toast or graham crackers. Makes about 1 cup.
Reduce apricots to 1/4 cup and add 1/4 cup dried cherries.
Replace apricots with dried apple rings.
