Peach Crisp for Two
Prep time: 10 minutes
Cook time: about 5 minutes
1/3 cup peach preserves
1/4 cup white wine
2 medium ripe Chilean peaches or nectarines, pitted and sliced 1/4-inch thick
1/4 cup coarsely crushed crunchy oatmeal cookies
Whipped cream and toasted sliced almonds (optional toppings)
Place preserves and wine in a small saucepan and bring to a boil; cook until excess liquid has cooked off. Stir in peaches or nectarines and cook for a few minutes more. Let cool, then spoon into 2 small bowls. Just before serving, top with crushed cookies, whipped cream and almonds. Makes 2 servings.
