Nacho Cheese Sauce
This sauce is great for nachos, or simply as a dipper for tortilla chips or wedges of flour tortilla.
Prep time: 10 minutes
Cook time: 15 minutes
2 tablespoons butter
2 tablespoons minced onion
2 tablespoons flour
1 1/4 cups milk
1/4 cup red enchilada sauce
Tajin Classico Seasoning to taste
1 cup shredded sharp California Cheddar cheese
Melt butter in a medium saucepan over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Stir in flour and cook for 1 minute more. Slowly stir in milk until a smooth sauce forms, then stir in enchilada sauce and seasoning. Add cheese a little at a time, stirring constantly. Cook over low heat for 5 minutes more. Serve warm over tortilla chips topped with seasoned meat, sour cream, guacamole, diced tomato and sliced green onions.
