Apple Date Spread

Apples add a bit of tang to this spread that’s similar to a classic apple butter. Serve on toast, a Brie and turkey sandwich or bake in puff pastry with cream cheese and chopped apples for a decadent pastry.

Prep time: 10 minutes

Cook time: 35 to 40 minutes

Cool time: at least 30 minutes

1 cup apple juice

1 tablespoon lemon juice

8 large fresh or 12 smaller pitted dates

2 medium tart apples, peeled, cored and cubed

Place all ingredients in a small saucepan and bring juice to a boil. Cover and simmer over low heat for 30 minutes. Remove lid and let cool. Place in a small food processor and process until smooth. Transfer back to saucepan and cook over medium low heat until excess liquid has cooked off and spread is very thick. Let cool, then store in a tightly covered refrigerator for up to 2 weeks. Makes about 1 1/3 cups.
