Oat Milk Spinach Alfredo Sauce

1 (5-oz.) container shredded Parmesan cheese

1/3 cup flour, divided

1/3 cup butter

1/3 cup white wine

2 cups Chobani Extra Creamy Oat Milk*

3/4 cup chicken or vegetable broth

1/2 teaspoon garlic salt or to taste

1 cup coarsely chopped and lightly packed fresh spinach

Freshly ground pepper

 

Place cheese in a medium bowl and sprinkle with 3 tablespoons flour; toss to coat Melt butter in a medium saucepan over medium-low heat. Add remaining 5 tablespoons flour; cook and stir for 1 minute. Whisk in wine and cook for 1 minute more. Slowly whisk in milk and broth. Cook, whisking constantly, until mixture is thickened and bubbly; reduce heat to low. Slowly add cheese to the sauce, whisking until smooth and melted before adding more. Remove from heat and stir spinach into hot sauce and season with pepper.

 

*Sauce will thicken as it cools. Stir in additional oat milk to thin as needed when reheating.
