Tangy Corn Relish

Cook time: 5 minutes

Chill time: several hours


3 cups fresh corn kernels

1/2 cup chopped roasted red peppers

2/3 cup peeled, chopped cucumber

1/2 cup sliced green onions

1/2 cup white wine vinegar

1 tablespoon olive oil

1 tablespoon sugar

1/4 teaspoon celery seed

Stir together all ingredients in a medium bowl. Cover and chill at least several hours to marinate. (May be made up to 2 days ahead.) Makes 10 servings.
