Pumpkin Almond Shortbread

1/2 cup softened butter

1/4 cup sugar

1 teaspoon pumpkin pie spice

1/4 cup very finely chopped Blue Diamond Honey Roasted Almonds

1 cup flour

Preheat oven to 350°F and line a large baking sheet with parchment paper. 

Stir together butter, sugar and pumpkin pie spice in a medium bowl, then stir in almonds. Add flour and mix with a fork or with your hands to form a dough. 

Roll into a 2-inch log and cover tightly with plastic wrap. Chill until very firm. 

Slice 1/4-inch thick and place on baking sheet. Bake for 10 minutes or until lightly browned.
