Raspberry Truffles

Prep time: 10 minutes

Cook time: 5 minutes

Chill time: at least 1 hour

1/4 cup heavy cream

1/4 cup butter

1 teaspoon raspberry extract

1 bag white chocolate chips

Unsweetened shredded coconut (optional)

Melt cream, butter, extract and chocolate chips in a small saucepan over very low heat, stirring frequently. When chips are almost fully melted, remove from heat and stir until smooth. Spoon into paper lined mini muffin cups and sprinkle with coconut, if desired.
