Caramelized Onion and Apple Flatbread
The prosciutto adds a fantastic savory flavor to this flatbread, but you can skip it to make it vegetarian.

Cook time: 40 minutes total
2 tablespoons butter
1 very large onion, halved and thinly sliced
1 large or 2 small Modi Apples, cored, quartered and thinly sliced
2 pieces Stonefire Artisan Flatbread or Naan Bread
12 oz. fresh mozzarella cheese, torn into pieces
1/2 cup shredded good quality Gouda cheese
6 slices prosciutto, torn into pieces
1/4 cup grated fresh Parmesan cheese
Fresh thyme leaves
Heat oil in a large skillet. Add onions and cook over medium low heat, stirring frequently, for 20 minutes, or until onions are very soft and golden brown. Add apples and cook for 10 minutes more, stirring frequently. Preheat oven to 450°F. Place naan bread on a large baking sheet and top with equal amounts of Mozzarella cheese, onion apple mixture, prosciutto and Parmesan cheese. Bake for about 10 minutes or until cheese is melted and crust is golden brown. Top with chopped thyme and let cool slightly.
