Grilled Caesar Salad

Using wPrep time: 5 minutes

Cook time: 3 to 5 minutes

 

1 lb. California King Salmon fillets

Salt and pepper

Oil

1 (18-oz.) pkg. romaine hearts

Caesar salad dressing, plus additional for serving

Firm but ripe avocado cubes

Diced tomato

Freshly shredded Parmesan cheese

Croutons

 

Preheat a grill to medium-high. Coat the top of the salmon with a light layer of oil and season with salt and pepper. Oil the grill grates and cook salmon for 3 to 6 minutes per side or until it flakes easily with a fork. Remove from grill and let cool. When cool enough to handle, break into small pieces.(May be prepared several hours ahead and chilled until ready to serve.

 

Cut each romaine heart in half lengthwise. Brush cut sides liberally and leaves lightly with dressing. Grill over medium heat cut side down for about 2 minutes to very lightly char the greens. Remove from grill and place on serving plates or a platter. Sprinkle with avocado, tomato, cheese and croutons, then top withood chips while grilling will give the salmon and lettuce a slightly smoky flavor.
