Ham and Brie Puff Pastry Sandwiches
Prepared puff pastry make these sandwiches come together in no time. Perfect for breakfast, brunch or even a light dinner.

1 sheet frozen, thawed puff pastry
Dijon mustard
8 thin slices deli ham
8 slices Alouette Double Cream Brie
1 egg beaten with 1 tablespoon water
Freshly ground pepper
Fresh thyme leaves and microgreens
Pickled red onions (optional)
Preheat oven to 400°F and line a baking sheet with parchment paper. Unfold pastry and cut into 4 squares. With the pointed ends facing the top and bottom, spread a small amount of mustard in the center of each. Top with a slice of brie and ham slices. Finish with the last slices of brie and sprinkle with pepper. Fold in the sides and press well where the edges meet to seal the pastry. Place on baking sheet and brush with egg wash. Bake for 20 minutes or until golden brown. Garnish with fresh thyme leaves and microgreens. Serve with pickled red onions, if desired. Makes 4 servings.
