Avocado Toast with Pickled Veggies and Hummus

Prep time: 10 minutes

Stand time: 30 minutes

 

Pickled Veggies:

3/4 cup cider vinegar

1 teaspoon sugar

1/2 teaspoon each: ground cumin, ground coriander and garlic salt

1/3 cup small matchstick pieces carrot

1/4 cup each: small slivers red bell pepper and red onion

Thinly sliced jalapeno pepper to taste

Toast:

Whole grain bread or naan bread

Coarsely mashed ripe avocado

Fresh Cravings Honey Jalapeno or Jalapeno Cilantro Hummus

Fried egg

Fresh Cravings Salsa (any variety)

Fresh cilantro leaves

 

Heat vinegar, sugar and seasonings in a small saucepan until very hot. Remove from heat and stir in vegetables; let stand for 30 minutes. Chill until ready to serve. (May be prepared several days ahead.)

 

When ready to serve, toast desired bread and spread a thick layer of avocado over the top. Add a layer of hummus and top with a fried egg. Sprinkle with pickled veggies, and finish with salsa and cilantro. Serve immediately.
