Crispy Tater Tot Cups with Scrambled Eggs

Two ingredients is all you need to make these tasty cups!

 

Prep time: 15 minutes

Cook time: 20 to 25 minutes

 

48 tater tots

1/2 cup shredded Cheddar cheese (preferably sharp)

Happy Egg Company scrambled eggs

 

Preheat oven to 400°F and spray 10 nonstick muffin cups with nonstick cooking spray. Crumble tater tots in a medium glass bowl and microwave for 1 minute on HIGH for 1 minute to warm. Add cheese and mix well with your hands, pressing well with your fingers until mixture sticks together. Place about 1/4 cup of mixture into each prepared cup and press firmly with your fingers to cover the bottom and sides. (A small spoon works well here too.) Bake for 20 to 25 minutes or until golden brown. Let cool, then remove with the tip of a small sharp knife or a small metal spatula. Fill with scrambled eggs, adding a bit of extra cheese to the eggs for extra flavor.

 

Recipe tip:

These cups may be prepared ahead and stored in a covered container in the refrigerator. To reheat, place on a baking sheet and cook at 400°F for 5 to 10 minutes or until warm and crisp.
