Deviled Eggs

For a fun sampling presentation, cut eggs into wedges before filling. This allows people to sample more flavors! Replace half the mayo with plain Greek yogurt for a slightly tangier flavor.

 

Prep time: 15 minutes

Cook/Stand time: 10 minutes

Chill time: 1 hour

 

6 Happy Egg Company Eggs

 

Place eggs in a medium saucepan with at least 1-inch of water covering the top of the eggs. Bring to a boil over medium-high heat, then remove from heat and cover pan. Let stand for 10 minutes. Drain well, then cool quickly by adding ice water to the pot. Peel eggs and cut each in half. Scoop out yolks into a medium bowl and mash with ingredients listed below and sprinkle with toppings as desired. Cover and chill until ready to serve. Makes 12 servings.

 

Bacon Cheddar:

1/4 cup mayonnaise

2 tablespoons crumbled bacon or bacon bits, plus extra for topping

2 tablespoons shredded sharp Cheddar cheese

 

Smoked Sea Salt

1/4 cup mayonnaise

1 teaspoon stone ground mustard

1/4 teaspoon smoked sea salt

Snipped fresh chives and chopped fresh parsley (optional toppings)

 

Green Chile and Cheese:

3 tablespoons minced canned green chiles

3 tablespoons mayonnaise

3 tablespoons shredded sharp Cheddar or Mexican blend cheese

1 teaspoon Mexican seasoning blend

1 teaspoon spicy brown mustard

Garlic salt to taste

Snipped fresh cilantro and green onion tops (optional toppings)

 

Brie and Thyme

3 tablespoons each: cream of Brie and mayonnaise

1 1/2 teaspoons chopped fresh thyme

1/2 teaspoon garlic salt

Freshly ground pepper to taste

Snipped fresh chives and fresh thyme leaves (optional toppings)

 

Sun-Dried Tomato Parmesan

3 tablespoons mayonnaise

2 tablespoons grated Parmesan cheese

2 tablespoons minced sun-dried tomatoes

1/2 teaspoon garlic salt

1/2 teaspoon Italian seasoning blend

Freshly ground pepper to taste

Snipped fresh basil (optional topping)

 

Sriracha

3 tablespoon mayonnaise

2 teaspoons sriracha sauce

1 teaspoon spicy brown mustard

Garlic salt to taste

Snipped fresh chives and chopped fresh parsley (optional toppings)

 

Chimichurri

3 tablespoons mayonnaise

2 tablespoons chimichurri sauce

Garlic salt to taste

Snipped fresh cilantro (optional topping)
