Spicy Chile Cheese Waffles

Add a bit of Mexican seasoning blend for extra flavor! 

Prep time: 10 minutes 

Cook time: 2 to 3 minutes per batch

1 cup complete pancake mix

3/4 cup milk 

1/2 cup Stonemill Kitchens Spicy Pepper & 3 Cheese or Artichoke, 

     Jalapeno & Parmesan Dip, plus additional for topping

2 tablespoons melted butter

1/2 teaspoon Mexican seasoning blend

1 egg

Fresh pico de gallo, diced avocado, sour cream and cilantro leaves (optional toppers)

Stir together pancake mix, milk, dip, butter, seasoning and egg in a medium bowl until smooth, adding a little additional milk if batter is too thick. Brush a hot waffle iron with melted butter and spoon 1/4 to 1/6 of the batter into the center, depending on the size of your waffle iron. Gently close waffle iron and cook for 2 to 3 minutes or until the indicator light turns green or until waffle is golden brown. Repeat with remaining batter. Serve immediately topped with additional dip and pico de gallo. Makes 4 to 6 waffles. 

Reheat tip: To quickly reheat and crisp waffles, place in a hot waffle iron for about 10 seconds.
