Tropical Granola

Cook time: 25 minutes

2 tablespoons butter

1/2 cup honey

1 teaspoon coconut extract

1 teaspoon cinnamon

2 cups rolled (old-fashioned) oats 

1/2 cup chopped walnuts

1/2 cup chopped dried pineapple

1/2 cup chopped dried mango

Preheat oven to 350°F. Melt butter in a medium saucepan; add honey, extract and cinnamon and mix well. Stir in oats and transfer to a baking sheet coated with nonstick spray. Spread into a 1-inch thick layer and pat together. Bake for 10 minutes, stirring once. Stir in walnuts and bake for 15 minutes more. Remove from oven and toss with dried fruit. Let cool completely to crisp.
