Lavender Oat Slice

This recipe has been a family favorite for decades! A hint of lavender adds a fun fresh twist.

 

Prep time: 15 minutes

Chill time: several hours

Cook time: 10 to 12 minutes

 

1 cup butter

1 cup packed brown sugar

1 teaspoon baking soda

1/4 cup hot water

2 teaspoons dried lavender

½ teaspoon salt

3 cups quick oats

1 cup flour

 

Melt butter in a large saucepan. Remove from heat and stir in brown sugar. Dissolve baking soda in hot water and add to saucepan with lavender and salt. Stir in oats and flour. Shape into 2 logs, round, square or rectangular, and press firmly to eliminate any air gaps. Wrap tightly in plastic wrap and refrigerate until firm. May be prepared ahead and stored in the refrigerator for up to a week or in the freezer for several months.

 

When ready to bake, preheat oven to 350°F and line 2 large baking sheets with parchment paper. Slice dough thinly and place on baking sheets. Bake for 10 to 12 minutes or until lightly golden brown. Let cool and store in an airtight container.

 

TIP: This is a great make ahead recipe. Make a large batch and keep in your freezer. When you need fresh cookies in a hurry, just thaw, slice and bake!
