Lavender Shortbread

Lavender adds  a unique good for you flavor to this classic cookie recipe. With only 4 ingredients could it be any simpler? This will be your travel or last minute go-to recipe!

1/4 cup butter, at room temperature

2 tablespoons sugar

2/3 cups flour

1/2 teaspoon dried lavender, plus additional for garnishing

 

Preheat oven to 350°F and lightly butter or line a baking sheet with parchment paper. Stir together butter and sugar in a medium bowl with a fork. Add flour and  lavender and mix well. Finish mixing with your hands to form a dough. Shape into a smooth round disc about 3/4-inch thick, then place on prepared baking sheet. Score surface with a knife to form 6 wedges. Sprinkle with a little lavender and press lightly into the surface. Bake for 25 minutes. Let cool completely before cutting into 6 wedges. Store tightly wrapped or in an airtight container for up to 7 days. Recipe may be doubled.
