Lavender Simple Syrup

Use this sweet lavender infused syrup for mocktails, cocktails or to sweeten iced or hot tea.

Cook time: 5 minutes

Stand time: 1 hour

 

1 cup sugar

3/4 cup water

1 1/2 tablespoons dried lavender buds

3 to 4 fresh blackberries (optional)

 

Bring sugar water and lavender to a simmer in a small saucepan. Let simmer for 5 minutes then remove from heat. Let stand for 1 hour for the lavender flavor infuse in the syrup. To add a bit of purple color, add blackberries and mash with a fork to release juices. Strain through a fine mesh strainer and pour into a small canning jar or simple decanter.

 

Recipe uses:

·      Add to fresh lime juice, fizzy water, fresh lime juice and torn fresh mint leaves for a fresh mojito mocktail.

·      Use to sweeten  iced or hot tea.

·      Use to sweeten lemonade.
